Regarding Valheim server 1. I wouldn't say we're more intense. We just got started earlier and as veteran survival players know how to communicate and plan things to progress. Every one of us has had those moments of screaming in terror from running into and going splat from a troll or the first time seeing a sea serpent jump out at you. We're following the bread crumbs the game gives us like everyone else and exploring a TON and finding even more ways to die horrible deaths...

Computers were a mistake
I think it depends on the game. From personal experience games like Overwatch or Deep Rock Galactic are games that require communication and have a tactical nature. There you all want to be in voice and coordinating the moment to moment games.
Other cases like Valheim, are large community "chat rooms" almost where people are there hanging out but not always working towards the same goal. It's a very coffee house/cafe experience.
And then there's solo experiences like Dyson Sphere Program or Hades where it's just fun to stream the game to the community in Discord, have people watch, and just chat and chill.
Maybe I'll get in trouble for admitting this but I rarely if ever interact with the text channels in Discord. There's just too much information to keep track of and as someone who always has to go back and read through each and every post from the beginning of a forum to today, that speed is just overwhelming. We're starting to see a lot more grouping and coordination through the #apollo-events channel found under the General Text Channels. For instance right now I see a re-occurring Star Wars Squadrons, Among Us, and Rocket League events that if you sign up for, Discord will send you a reminder before the event!

This so much. I want to get more involved in GWJ discord, but it's just too much. I don't have a ton of free time, so I don't want to waste it trying to figure out what's happening in channels with hundreds (or thousands!) of lines per day. I glance at the discord, get overwhelmed, and instead just go play something by myself. ):
The rule of thumb to remember is that we don't actually know the people we listen to on those big podcasts. It's easy to kind slide into the easy camaraderie when you listen to folks twice a week or once a week or whatever, but just because we know them (or at least we know what we see/hear in the podcast), doesn't mean they know us. It's not an equal relationship. That takes time and respect and dialog, and the answer isn't "going submissive". It's listen, and engaging and talking. Not just with the GWJCC crew (who don't always have time to hang out in the Discord, because they're normal human beings - albeit very awesome ones!), but with all goodjers!
Honestly, I'd recommend just joining the Discord, and hoping in and out of the watercooler channel. That's what I do, and I mostly stick with the morning crew because time zones and I just can't keep up with the chatter in the evening, it moves too fast for me.
And take a look at the other channels! I have a whole bunch muted, because I don't play Overwatch or Valheim (yeah, I know, I'm not one of the cool kids ), but that's the beauty of Discord, you can tailor it to your needs. Organize game nights, maybe there's some obscure tabletop simulator game that you want to play. I guarantee you'll find some folks who will play with you.
Of course, I'm six hours ahead of Eastern, so my experience is very different from that of the rest of you on the other side of the Atlantic.
On to the conf call, which was just so much fun to listen to, thanks folks! I really appreciated the Conquest of the Longbow nod, Sierra fans represent!!
The question about professions was really interesting (BE KIND TO RETAIL WORKERS, PEOPLE!! Especially now, geez, just be decent human beings, please) and I wanted to throw out a nod to Quarantine Circular which featured an epidemiologist and brought a single tear to my eye. <3 Also, it was a fascinating game with a great story, I hope we can get to it in the adventure game club one of these days.
Also... You mentioned talking to yourself while gaming... I do that a lot. So that's kinda how I started streaming. Like Meebs mentioned, voicing puzzles out loud kinda helps me break them down and figure them out.
Finally. It was sooooo weird hearing how you pronounce Suzerain!! It's got a French etymology, and the word is still used today (in history lessons, at least), and just... I didn't expect hearing a "rain" there at the end, we pronounce it "su-zuh-rehn". Something like that. Oh geez, I'm perpetuating the "how to pronounce stuff" trend I started on Slack.
That's totally understandable, but if you're willing to give it another shot, I'd suggest focusing on the genre or game specific channels, and (mostly, at least) ignore the watercooler/venting channels, which is where most of the chatter goes on. I also wonder whether something could be done to help people who just (or mostly) want to use the Discord to find people to play. It can be overwhelming to crack into a new group when you get there and realize that a large fraction of the messages are from a somewhat small group that knows each other or at least interacts frequently. The funny thing for me is that I joined the Discord just to start participating in the Racing Dorks events and only after seeing the other channels I started interacting with other people and playing other games with them. So for what it's worth I can say it is a welcoming group.
