North Carolina BBQ. The kind with the spicy vinegar sauce, not that crappy red sauce. Wilber's is like the BBQ promised land.

I'll tell you what deserves its own thread. The light at the end of the tunnel. The end of this election is in sight and I couldn't be more ready for this all to be over.

It used to be kind of disgusting, but I had a chance to try it again recently, and it's really freakin' good now.

Also, all the talk about southern food makes me hungry. I honeymooned in Nashville, and once you've eaten at a Waffle House most anything you find in Massachusetts seems pale and sad (Disclaimer: I don't like seafood, so the above statement probably only applies to me). They got barbecue-- real barbecue, not "barbecue" as New Englanders call it-- down there that would make your tongue slap your eyeballs out. (To be fair, there's a tremendous BBQ joint in Burlington, which happens to be run by a fellow from TN. Coincidence?)

Southern folks sure know how to cook.

Even the McDonald's chicken nuggets were better in Tennessee.

The vinegar "sauce" pales, by far, to the mesquite, honey, and dry rub bbq's.

On the subject of Carolina BBQ, here's my sauce recipe:

2 cups cider vinegar
1 cup brown sugar
2 tblsp - 1/4 cup yellow mustard
1/2 tsp red pepper
1 1/2 tsp black pepper
1/2 tsp salt
1 tblsp worcestershire sauce
1 tsp tabasco or hot sauce

Toss all that in a pot and simmer it till it thickens up a bit. For meat, get a good pork shoulder and smoke it, or roast it. Smoking after rubbing it down with a good, basic BBQ rub(Sorry, not giving up that recipe, but there are tons out there :D) will yield much, much better results than roasting it following the rub down. But basically, rub it down with your rub, wrap in plastic, sit in the fridge for a day or two ahead of the scheduled roast time. Then toss it in the smoker for half a day or so, till it's falling apart. Boneless shoulders will suffice for this, but bone in shoulders, with fat all in em are superior. I"m talking $1.00/lb for the meat here.

edit - I just noticed where you linked to.. Goldsboro! My grandparents live just an hour or two from there, in Arapahoe. I pass through there all the time on my way to visit em.

My wife's family heads to the beach in NC every summer and they all stop at Wilber's on the drive there and back. Definitely worth a stop on your next trip through Oh, and thanks for the recipe!

I'll jump on the tomato-based BBQ sauce train.

I'm appalled by the fact that Q-Stone and cartoonin live in my state, let alone the fact that I talk, break bread, and play games with them as friends. I'd have plenty to say in defense of North Carolina BBQ, but the infidels will never learn. They're blinded by their love of evil sweet and spicy spaghetti sauce. I'd say more, but I'd easily slip into P&C territory on this one.

If you need a starting off point, I go monster on spinach, rice, black beans, half dark meat chicken half steak, mixed cheese, salsa, pico, tomatoes, guac(50 cents extra), corn salsa, BBQ sauce (trust me it fits), lots of cilantro, 2 scoops jalapenos and a lot of lime juice.
If I'm very hungry or just feel gluttonous I get the combo with chips and queso as they have some of the best queso.

On BBQ, for pork I like the vinegar. Nothing matched Ollies in Birmingham, and Dreamland is pretty good (love that black pepper).
For the beef, I like the spicy stuff over at Leo's in OKC. They also do smoked bologna which is delicious.

Descending a XC Mountain biking trail after you crest the summit. IT makes you feel so damn good.

Edit: Not a BBQ sauce thread, + you don't need sauce to make it good, just fresh Oregon salmon and wood plank.

I hate to be the one to tell you this, but Ollie's is closed. That was some fine 'Q. I believe you can still get the sauce in some grocery stores though, as my parents always have a bottle on hand when I visit. Either that or they stocked up for the BBQ apocalypse. If you're in B'ham though, check out Miss Myra's for the best pulled pork. Also Johnny's in Cullman (45 minutes north on I-65) is excellent, just be sure to ask for it the way you want (inside, chopped).

Also, no Dreamland is really worth it except for the one in Tuscaloosa.

I was playing WoW with my brother last night and one of the people beneath him in is platoon ( or squad etc ) was being a d%ck and I got to hear my brother tell him over vent "Alright Kane that's enough. I once did the Super Monster with death sauce. It was like eating a small child on fire. It was glorious.

It was hilarious when my Mom sent me an e-mail the other day with this news report talking about Microsoft "Big Ass Table" Surface Computing.
