Back in the early days of the Internet, web page heat maps were a big thing. Many sites did quite a lot of research into how people's eyes tracked on different layouts of web pages. I found it all very fascinating.
Amazon, on the other hand, in the early 2000s when I worked there, did very few user studies. They had enough traffic that they did everything with a/b testing. The layout that resulted in the most purchases won. It was frighteningly effective.
