I can tell you that in both cases he felt the same way about the games. Sometimes you say something and it doesn't come off the way you really want. In this case the first time around he realized what he said sounded too negative in the end.

Well, the tone may have a lot to do with expectation as well, right?
The previous entries in the Fallout canon cast a long shadow over Fallout 3, especially given the controversy of the departure from the turn-based RPG conventions established through the series, so the conclusion that the game was merely decent or "serviceable" may not have sat well with those who came into the game with greater expectations.
Dead Space, on the other hand, was a brand new IP. That the end product turned out to be decent made it more of a curiosity, something that was unexpected because you probably had no initial expectations beyond what could be speculated and discerned from screen shots and various previews.
