As someone currently running four (4) simultaneous D&D campaigns, i'm really , REALLY keen on taking a bit of a 'campaign break' and maybe running some small pallet cleanser one-shots once the curtain falls on at least ONE of these epic adventures! ...even though i find these rules-lite, short-form games to be surprisingly more intimidating to run than something more comfortable for me like D&D.
Right now I'm eyeing up Quest, which i've had on the shelf for a while but it's a super streamlined little game that looks a lot of fun. (Character creation is basically just filling in a madlibs character sheet) And it's a SUPER CUTE book with amazing art. OR possibly Vaesen, which is literally in the mail now and i can't wait to get my hands on a physical copy of!
Can also guarantee it's super important to know your players and their specific requirements when setting up a campaign. I know that several of my euro GWJ players are adverse to violence against children, for example, so running Curse of Strahd with them was an absolute no-no. (The amount of child endangerment in that book is borderline parody).
That said, i'm still relatively new to this so i definitely have areas to improve in terms of session zero content. Especially important when you consider the horrific way Adam Koebel treated one of his players recently. So there's always room to learn new things.
One thing to highlight is the TTRPG Safety Toolkit, which you can download here to use in games.
Oh and it came up in the DM's thread but some wonderful person put together a list of every TTRPG released in that recent itch.io charity bundle. Obviously the bundle is finished now but it still makes for a great list of small indie TTRPGs that are worth checking out (including a bunch that can be played one-on-one, or solo journalling games for those that can't really get a big group together to play with).

I enjoyed this episode a great deal. I haven't taken part in a roll-play game for many years but I like the sound of trying out a one-shot some time soon.
I'd already bought my selection of games from the Steam sale but could't resist the jigsaw game so wen't back and picked it up
Another jigsaw style game that I can recommend is Glass Masquerade there's also a version 2 which I picked up in the sale after playing and enjoying the first one, the DLC is good value too.

Couple of systems I've played that work well for one shots:
Inspectres - It's basically Ghostbusters except with encouragement to be even more ridiculous. It's not quite Honey Heist levels of simplicity, but there's not a whole lot there to be bogged down with.
Everyone is John - A very simple game where each player takes turns controlling John, who is having a personal breakdown. The downside is that the premise of this game is based in mental illness, which is not great. The versions I've observed and played in have substituted various other motivators: possessed by spirits, corrupted by Lovecraftian creatures, Being The Joker, etc.
Fiasco - Talked about on the CC before, but it's a great icebreaker.
One Shots I'd like to play and seem like they might work well:
Lady Blackbird: Almost more of a scenario than a system, it's won a bunch of awards and acclaim. Each player takes on a different prebuilt character, each with their own objective based around the titular Lady Blackbird while traveling on a zeppelin in a steampunk universe.
Okult: A horror game based on memories of each of the players' hometowns.
I feel like they missed the boat by not titling it Glassquerade.
