Heat transfer into the thermometer's sensing medium occurs as a result of atomic collisions --> changes in velocity of said atoms --> acceleration.

It's kind of both. The steady state reading of a thermometer is not zero. The rate of rise in the thermometer is the rate of heat exchange entering through the mechanism you mentioned. But the reading, the volume of the fluid, is related to the speed of the particles. I think, I'm am not a thermodynamicist.

Actually. The more I think about it the more it seems exactly like a speedometer. The mechanism of change in the state is second order, but the measured quantity is first order in both cases.
