Generally regardless of what you pick there will be a period of hitting max level unless you pick a sandbox game and there's still the issue of leveling up your skills which can seem grindy as well. EVE leveling is time based so dependent on the group you hook up with that would probably be your quickest route to pvp if thats what you were into.

Firefall was too grindy. A big element of that was the PvP didn't do it for me. (Yeah, yeah, beta, I know, but I want to play something now, while FF is in beta.)

Lotro is about the limit on up grindosity.

Lotro was great, btw, but having already read the books a bajillion times, the story wasn't new. Plus it seemed fairly pay-to-win, what with gold caps and bag limits and so forth.

Tell me about Darkfall.

Darkfall is a fantasy RPG sandbox with world wide PvP. You have the political in-fighting you find in EVE. But done through alliances and keeps, hamlets for territorial control. It's a modified skill-based system. Each class has a set of default skills that level up the more you use them as well as 'points' can be accumulated to place them where you want on a large selection of skills. It can be very brutal. While there is safe zones you end up gaining less skill points after a certain point and to start leveling up at a decent pace you have to step out into the real world and run the risk of running into hunting parties. You rarely fight 1v1.

Whoever survives a 1v1 is likely to be ganked by a group soon thereafter.

I can't say I've ever really heard that, but I can see it. EVE's completely skill based, and skills train constantly; there's limited options for speeding up skill training. I like the system better than what you'll find in Darkfall primarily because Darkfall is more along the lines of UO; to skill up, you have to go out and do that thing over and over. IMO, it's about the definition of grindy. EVE has stuff like that for sure, but what I like about EVE is that there's a ton of options to get around that.
