web server hosting?

I am beginning a project which involves running a non-trivial website. Since I don't have my own datacenter, I'm looking at renting space from one of the legion webhosting companies out there. I want the following:
shell access. ksh and vi, dammit.
apache. I want access to my conf files.
PHP and perl-cgi.
mysql.
Anybody have experiences - positive or negative - with obtaining said services which they'd like to share? Which companies should I look twice at? Which should I avoid?

I use Ace-Host and have had very few problems with them. I don''t, however, think you can get apache conf file access.

I use www.hostingtrade.com and couldn''t be happier with them. Standard packages, with full cpanel and unlimited domains and MySQL/PGSQL db''s. Not sure about conf file access either here. I think that''s the kind of thing you get with a dedicated host, not shared hosting.
