My main ground out the last bit of runecloth she needed, and got the Ambassador of the Horde achievement tonight. (I started playing just about the time Burning Crusade came out, so becoming exalted with all factions was a challenge.)
Next in line is Guardian of Cenarius -- I figure that's about a two-hour grind to get enough Encrypted Twilight Texts -- I only need about 100 more. I may never ever return to Silithus (unless I get into a AQ20 or AQ40 PUG someday). I worked towards both of these together, since the twilight cultists drop runecloth. I did crack and buy the last 11 stacks of runecloth, though.
I haven't put a lot of work into achievements, although I'm looking forward to trying some of the Heroic ones once I've hit 80. It was fairly trivial, but I did get a few warm fuzzies from getting Damage Control. I think the hardest one I've managed so far was Medium Rare, but that happened by blind chance while mucking around on an alt!
All in all, I like the system. It's a good way of adding a bit of extra flavour to the game, and has a range of things for both the casual and hardcore players.

I would also love to get the older raids completed - Blackwing Lair, AQ20 and 40, and Molten Core specifically. And the BC raids I never got to participate in - aka, all of them except Kara and ZA.

The only achievements I've really chased so far are the Merrymaker ones. I had to level cooking from 0-325, which was quite a pain.
I'd like to get all the seasonal achievements and titles, but that will require me to stay focused on WoW all year (which I'm sure is part of the plan on Blizz's part), PLUS a year after that - if I understand it correctly, you have to sign up for the Brew of the Month club and then actually drink all the brews, which means that I won't be done until fall of 2010. Which is so stupid that I might just drop the whole thing.

I was all geeked up to be "Chef Enix" when I realized you needed to cook ALL of those recipes on the list and that the list is out of whack until 3.0.8.
Is it too much for a casual player to ask for one tiny title?
3/4ths of the Horde faction bosses before Wrath hit. Level 83 mobs at 70 = fun.
I had to stack all the hit rating stuff I could to keep up faerie fire on Sylvanas. I had somewhere around 40% hit after talents, and still had resists left and right.
The most likely way for the world to be destroyed, most experts agree, is by accident. That's where we come in; we're computer professionals. We cause accidents.

I think the one I'm most proud of at the moment is Higher Learning. It's the one where you search out a list of 8 books in Dalaran. Gives you a nice little pet.

I try to not get too wrapped up in achievements because (at least for now) doing so would steer me away from playing the way I would like to.
That said, I eventually plan to go back and get the "Ambassador" title, since I'm already exalted with two of the five factions and about a third of the way through revered with the other three. Also, I must admit that the presence of other similar cool little rewards could definitely compel me to go achievement hunting in the future (the titles "loremaster" and "seeker" also have a nice ring to them ). For now, though, I'm focused on what is more the core of the game for me.

As part of my casual-ness, I missed huge chunks of Azeroth (I'm still not Exalted with Ironforge, my home faction), which means I'd have to jet back to the old world and run circles around Westfall zzzzzzzzz. But it's a nice title and probably the one I'll get if Chef doesn't pan out quickly.
Speaking of Chef ... the Northrend Gourmet achievement required for the chef's title is currently bugged. There are a couple of recipes listed there that supposedly aren't in the game. (I say "supposedly" because I encountered an RP'er who gave me some Succulent Orca Stew which he said he was able to make from a recipe that dropped somewhere in Northrend.)
I'm not clear yet on how it's going to work out. All I know is that I'll need to keep collecting Cooking Awards (and Chilled Meat and Rhino Meat, etc. etc.) for a while yet. I really like how complicated and interesting cooking has become, and I love the hour-long buff. Now if I can find a way to make some money off it ...
As for the explorer, I found it was easy, but just took time to get all the locations I had missed. The nice part is you don't have to find every location in a zone, just the majority, and only the ones listed in the achievement. Allakhazam has some good maps to use as a reference for those hard to find locales. You can even do it piecemeal. Tell yourself you're going to clear a zone or two in the old world before you run Northrend quests. On an epic mount, it's really not too bad, and you don't have to worry about mobs.
Definitely one of my favorites was the "Bros before Ho Ho Ho's" offered as part of the Merrymaker title. For some reason I thought it would be hilarious for a holy priest to get "Did somebody order a knuckle sandwich?" so, I duked it out with something once every couple of hours while questing, keeping up PW:S and renew until I FINALLY got it. That last point takes frickin' forever. Then I had to go for Master of Arms. I was pretty pleased with myself over both of those.
Also, I love my Merrymaker title, special thanks to thank Fed for his help with the pvp quest. I had just about written that one off. Gotta thank poor Crazy too, he also tried to help but I was grumpy that day. Although, during that attempt I got "Damage Control", "That Takes Class" and I think one more achievement, those were complete surprises!

From the "Achievements I don't deserve" category: while attempting the quest "Thrusting the Spear" or whatever it's called, I was killed by the dragon and of course, the whole dying thing loosened my grip and I plummeted to the snow, upon which I got the "Going Down?" achievement. I was dead when I landed, but I guess since it wasn't the fall that killed me, I got the achievement. Kind of a lame way to get it, but, hey, what can ya do?

Does slow fall work for "Going Down?" I recall trying it and it not working. I wound up hopping on a flying mount, rising vertically, and dismounting. If not dead + no achievement, heal, remount, and try again slightly higher. Worked for me.
As a new player I've been really enjoying the exploration achievements. Been giving me a chance to ride around and see stuff with a little bit of added in purpose.
While I love the Title from the exploration achievement (not to mention the nifty epic tabard), my favorite is still "To All The Squirrels I've Loved Before". I couldn't wait to get out to Northrend and find the last two frogs on the list.

Not necessarily -- when I got the Ambassador title, I didn't have to log out and back in. The title showed up as soon as I handed in that last stack of Runecloth to the snooty Blood Elf in Silvermoon. (For one of the cloth turn-quests, he says something about you only wanting reputation so you can get a Hawkstrider. And every time you hand in runecloth, he says "Well, well. Even more runecloth.")

The tabard is it.
Rep from tabards is a new thing in Wrath, and only applies to Wyrmrest, Ebon Blade, Argent Crusade, and Kirin Tor (and if you wear something else, or nothing, you get your faction's Wrath rep - like Alliance Vanguard).

To clarify: I got the Jenkins title as soon as I helped gank all of those flying dragonbats. (And we ganked a ton of them - did I mention I was running with *three* Death Knights? They made volley look weak, weak, weak.)
But I didn't want the title showing, and there wasn't any option to turn it off. Once I logged off and logged back in, the drop-down menu appeared.

I love the sheer absurdity of To All The Squirrels I've Loved Before but I have no intention of actually trying to do it.
