All I Want
Let's have a game where there are an infinite number of character animations possible, all easily, and intuitively pulled off with a joystick that has 8 buttons, and a directional pad. Also, the character should never perform the same animation twice on single enemy model.
Let's get rid of HUDs because they ruin the immersion factor in a game. The game must also intuitively indicate the amount of ammo I have left in my gun without said HUD.
Screw difficulty level! I want AI that drops the hammer on me as soon as one guard is alerted in the entire base. I want everyone in the base to strap on bullet proof armor and barricade themselves at choke points because I alerted the guy on outskirts and he called it in.
I want a fully destructible environment that is 100 square kilometers. And by fully destructible, I mean, I want to be able to mow the lawn and see how the grass was cut. I also want a precision run, gun, and cover system implemented, realistic water and fire, driving physics that are as accurate as Gran Trusmio, flight simulation like Microsoft Flight Simulator, dynamic lighting, no pop in textures, no HUD, and AI that behaves like a real world army. I want all of that to run on my 360 without any frame rate hitches.
It shall be called Fallout Nights 2. No need for a part 1....it'll be that good.
Is that too much to ask for?

Do you really want an answer to that? No. You just might have to wait for a long time.
Out of everything you listed, my biggest wish would be for realistic AI. I want characters in game to act like characters in the real world would. I realize that also is a very very long ways off, but as long as we are dreaming....

I think there is a balance between realistic and fun. To realistic and the game is no longer fun.

I can agree with that, but I want an AI that at least seems to be intelligent. I don't believe there is a single game out there right now that even comes close.

Time, my friend. Oblivion was about NPC schedules. Lots of current shooters are about destructible environments. When the toolsets that developers use become sophisticated enough, you'll get what you want. Or at least there will be a slider that you will be able to turn up to "realistic." Whether that counts as "fun" or not, will be up to the individual.
It probably won't be on your 360, but maybe your 720.
