Lumines is an awesome game if you've never played - its somewhat tetris like, but music based and trippy.
Puzzle Quest is also an absolute must have title if you've nto played it on a DS already.
As for pure, no time-pressure puzzles, I'm not sure what else to point you to. I'm very very fond of Rez at the moment, and I think Worms, Catan and Carcassonne are pretty much mandatory as well. None of them neccesarily qualify though.

Zuma and Luxor 2. My wife was hooked on them (as well as Peggle) like cocaine.

Lumines is top notch. I think it's only 10 dollars now, but it was well worth the 15 or so I paid way back.

My partner assures me that Hexic 2 is a really nice improvement on the basic mechanics of the original Hexic, and it has a neat two-player (local, live, or against the AI) battle mode that's quite fun.

I'd like to throw my vote behind Lumines as well. It's an arcade hits thing now so the fact that you're basically getting only one mode of the full game is a bit easier to swallow. Once you get sick of the songs in base mode there are some cheap (I think they're 400 pts but I'm not sure since I have them all) expansion packs. There are a lot when you have all the packs. In essence it's simple enough to pick up and play yet complex enough to have some killer replay. The only downside is that it's not quite a 5 minute puzzler, as it can take quite awhile to lose and there are no real levels per se.
edit: Exit is also supposed to be a great puzzle game, though it might not be the popcap-style jewel matcher you're looking for.

I mentioned it in that other confused thread but I'll mention it here too. Be sure to give a look at Eets.

I played Lumines Live every night for months straight. Give it some time to click, though. There are many layers of how to play the game, but only after you break though the first layer does its brilliance truly become apparent.
Puzzle Quest is also very fun, although I played it on the DS rather than on XBLA. Its the first game that actually made the Bejeweled concept interesting to me, so I suspect it may do the same for other people who are suckers for RPG mechanics.
Hexic is also very good fun, although my brief experience with Hexic 2 made me feel like the version that came free with the Xbox was more than enough Hexic for me.
If you like competitive puzzle games, Super Puzzle Fighter 2 is the best one ever made. It's also quite fun as a single player experience, but the real joy of the game is the vs. mode.
Finally, there is a game coming out next week that is supposedly a cross between Planet Puzzle League (which you may recall as Tetris Attack on the SNES) and poker which seems rather intriguing to me, but its name escapes me at the moment.

Poker Smash I think. Zuma & Lumines are definite musts. I also love Puzzle Quest, it is actually really fun with two people, we haven't even started the quest yet.
Also, I must say I'm amazed by Rez so far. Not so much a puzzle game as it is an experience. But well worth my $10.
Ah yes, seconded there as well. It's sort of like incredible machine crossed with lemmings. The levels are well designed, and usually have what seems an "official" solution and more difficult, less obvious solutions that take careful placement and experimentation.
